Brewed Medium Show Mead

(recipe adapted from Compleat Meadmaker)
1 gal water
3.5 lbs honey (Larry’s “bulk local wildflower” honey, $2.50/lb)
1 Activator “Dry Mead” yeast pack, w/nutrients
Boil half of the water for 10 minutes, chill other half in fridge. Take boiled water off burner and add honey. Let steep at 160F for 10 minutes, then combine with chilled water in fermentor bucket. Let chill below...
